Kuwaiti cuisine is a beautiful reflection of Kuwait’s history, culture, and traditions of hospitality. Passed down through generations, it combines authentic Arabian flavors with influences from neighboring regions and centuries of trade and cultural exchange. Known for its fragrant spices, rich rice dishes, fresh ingredients, and warm hospitality, Kuwaiti cuisine remains an important part of the country’s cultural identity.

Food in Kuwait is more than nourishment; it is a symbol of generosity, family unity, and social connection. Gathering around the table is considered a cherished tradition, especially during special occasions and family celebrations. Traditional Kuwaiti hospitality is also closely connected to the serving of Arabic coffee and dates, which represent respect and a welcoming spirit toward guests.

Among the most beloved traditional dishes is Machboos, a flavorful rice dish prepared with aromatic spices and usually served with meat or chicken. Harees and Jareesh are also famous traditional dishes, appreciated for their comforting taste and authentic homemade flavors. Mutabbaq (Zubaidi), one of Kuwait’s treasured seafood dishes, reflects the country’s historical connection to the sea and its rich culinary traditions.

Kuwaiti cuisine includes a wide variety of dishes and flavors; however, today we will highlight a selection of traditional favorites, including Machboos Laham (meat), Kuwaiti Salad, and Jareesh.

For dessert, traditional sweets will include Girs Aqili cake flavored with saffron, Luqaimat, and Elba.

Moreover, Kuwaiti cuisine is distinguished by its use of fresh ingredients, carefully balanced spices, and recipes that preserve the authenticity of traditional cooking while continuing to evolve with elegant modern presentation.

In every dish, Kuwaiti cuisine tells a story of heritage, generosity, and tradition. Through its authentic flavors and warm hospitality, it continues to preserve the spirit of Kuwaiti culture while bringing people together around the table. It is a cuisine that reflects not only the richness of its ingredients, but also the warmth, elegance, and timeless values of the Kuwaiti people.

Jareesh (Oat Groats)

A comforting and traditional Kuwaiti dish, Jareesh is made with crushed oat groats slowly cooked with tender chicken, tomatoes, garlic, and warm spices until rich, creamy, and full of flavor. Known for its smooth texture and nourishing qualities, this hearty dish is a beloved staple in Kuwaiti cuisine.

Ingredients

* 800 g jareesh (oat groats)

* 1/2 kg boneless chicken

* 1 large onion, chopped

* 2 large tomatoes, chopped

* 1/2 tsp cumin powder

* 1/2 tsp turmeric

* 10 cloves garlic, minced

* 4 tbsp tomato paste

* 6 cups water

* Salt and black pepper, to taste

* Oil, for sautéing

Method

  1. Soak the jareesh

Wash the jareesh thoroughly and soak it in water for approximately 2 hours to soften the grains.

  1. Cook the mixture

In a large pot, combine the soaked jareesh, boneless chicken, onion, tomatoes, cumin powder, turmeric, and water. Bring to a boil, then reduce the heat and simmer for approximately 1 hour and 30 minutes, stirring occasionally.

  1. Prepare the garlic mixture

In a separate pan, heat a small amount of oil and sauté the minced garlic until fragrant. Add the tomato paste and cook for a few minutes until well combined.

  1. Combine and continue cooking

Add the garlic and tomato paste mixture to the pot and continue cooking for an additional 20 minutes, allowing the flavors to fully develop.

  1. Blend until smooth

Once the chicken and jareesh are soft and fully cooked, blend the mixture using a stick blender until smooth and creamy.

  1. Season and serve

Season with salt and black pepper to taste. Serve warm and enjoy this rich and comforting traditional Kuwaiti dish.

Meat (Lamb) Machboos

A classic Kuwaiti rice dish featuring slow boiled spiced Lamb, fragrant basmati rice, and aromatic saffron, finished with a sweet onion, nut, and raisin garnish.

Cleaning the Lamb (Important First Step)

Before cooking, the lamb must be properly cleaned to remove any impurities.

* Rinse the lamb thoroughly under cold running water.

* Place it in a pot, cover with water, and bring to a boil.

* As it heats, impurities and white foam will rise to the surface.

* Skim off the foam continuously using a spoon.

* After 10–15 minutes, drain the water and rinse the lamb again.

* The meat is now clean and ready for cooking.

We will now begin the preparation of our Machboos

Ingredients:

For the meat & stock

* 2 kg meat (for boiling)

* 10 g whole cardamom

* 3 cinnamon sticks

* 10 g cloves

* 2 large onions

* 5 bay leaves

Ground spices:

* 1 tsp ground cardamom

* 1 tsp ground cinnamon

* 1/2 tsp turmeric

Rice:

* 1 kg basmati rice, soaked for 1 hour

Saffron infusion:

* 15 saffron strands

* 1 cup hot water

Method:

  1. Cook the Lamb

Place the Lamb in a large pot with whole cardamom, cinnamon sticks, cloves, onions, and bay leaves. Cover with water and bring to a boil. Simmer for approximately 1 hour, or until the Lamb is tender and infused with aroma.

  1. Strain the stock

Once cooked, strain the mixture. Separate the Lamb from the spiced broth and set both aside. Discard the whole spices and reserve the flavorful stock.

  1. Cook the rice

Add the soaked basmati rice to the reserved Lamb stock. Adjust the liquid carefully to ensure proper absorption. Cook until the rice is approximately 80% done.

  1. Add saffron

Soak the saffron strands in hot water. Stir part of the saffron infusion into the rice and continue cooking gently until the rice is fully cooked and fragrant.

  1. Finish the lamb

Brush the cooked meat with the remaining saffron water and bake in the oven for approximately 20 minutes to enhance color, aroma, and depth of flavor.

Sweet Onion, Nut & Raisin Garnish

Thinly slice onions and fry until golden and caramelized. In a separate pan, gently cook nuts and raisins in water with a touch of sugar until softened and glossy. Use as a rich, sweet savory topping to finish the dish.

To Serve

Spread the fragrant saffron rice on a large serving platter, arrange the baked Lamb on top, and finish with the caramelized onion and nut raisin garnish. Serve warm and enjoy this traditional Kuwaiti favorite.

Daqoos Sauce

A vibrant and essential Kuwaiti tomato-based sauce, Daqoos is traditionally served alongside Machboos. Its rich, tangy flavor complements the spiced rice and tender meat, adding freshness and depth to every bite.

Ingredients

* 2 ripe tomatoes

* 2 cloves garlic, minced

* 1 tbsp tomato paste

* Salt, to taste

* Black pepper, to taste

* 1–2 tbsp oil (for sautéing)

Method

  1. Blend the tomatoes

Blend the tomatoes until smooth to form a fresh tomato base.

  1. Sauté the garlic

In a small pan, heat the oil and sauté the minced garlic until fragrant (do not let it brown).

  1. Cook the sauce

Add the blended tomatoes and tomato paste to the pan. Stir well to combine.

  1. Season

Add salt and black pepper to taste. Simmer the sauce over medium heat until slightly thickened and well developed in flavor.

  1. Serve

Serve warm or at room temperature alongside Machboos for the perfect traditional Kuwaiti pairing

Kuwaiti Salad

A fresh and colorful Kuwaiti salad made with crisp vegetables, bright herbs, and a light citrus dressing. This refreshing side dish perfectly complements traditional Kuwaiti meals, adding balance, freshness, and vibrant flavor to the table.

Ingredients

For the Salad

* Lettuce, chopped

* Cucumber, diced

* Red capsicum, diced

* Green capsicum, diced

* Yellow capsicum, diced

* Tomatoes, diced

* Fresh parsley, for garnish

For the Dressing

* Fresh lemon juice

* Olive oil

* Black pepper

* Salt

* Sumac, to taste

Method

  1. Prepare the vegetables

Wash all the vegetables thoroughly. Chop the lettuce and dice the cucumber, capsicums, and tomatoes into small pieces.

  1. Prepare the dressing

In a small bowl, combine fresh lemon juice, olive oil, black pepper, salt, and sumac. Mix well until combined.

  1. Combine the salad

Place all the chopped vegetables in a large bowl. Pour the dressing over the salad and toss gently until evenly coated.

  1. Garnish and serve

Finish with freshly chopped parsley on top and serve immediately as a refreshing accompaniment to traditional Kuwaiti dishes.

Alba Sweet

Alba is a delicate and traditional Kuwaiti dessert made with milk, cream, eggs, and fragrant saffron and cardamom. With its rich creamy texture and aromatic flavor, this elegant sweet is often served chilled and topped with nuts for a luxurious finishing touch.

Ingredients

* 4 eggs

* 1/2 liter milk

* 200 g thick cream

* A pinch of saffron

* A pinch of cardamom

* 1/2 cup sugar

For Garnish

* Walnuts

* Pistachio nuts

Method

  1. Prepare the mixture

In a blender or mixing bowl, combine the eggs, milk, thick cream, saffron, cardamom, and sugar. Blend well until the mixture becomes smooth and fully combined.

  1. Fill the molds

Pour the mixture into serving cups or dessert molds.

  1. Steam bake

Place the cups in the oven using a steaming method (water bath) and bake for approximately 1 hour until the dessert is set and lightly firm.

  1. Cool the dessert

Remove from the oven and allow the dessert to cool completely. Chill before serving for the best texture and flavor.

  1. Garnish and serve

Top with walnuts and pistachio nuts before serving. Enjoy this rich and aromatic traditional Kuwaiti dessert chilled.

Girs Aqili Cake (Traditional Kuwaiti Cake)

Girs Aqili is a beloved traditional Kuwaiti cake known for its soft texture, delicate aroma of cardamom and saffron, and golden sesame crust. Lightly sweet and beautifully fragrant, this classic cake is often served with Arabic coffee or tea on special occasions and family gatherings.

Ingredients

* 2 cups flour

* 1 cup sugar

* 1/2 cup oil

* 3 eggs

* 1/2 cup yogurt

* 1/2 tsp ground cardamom

* A pinch of saffron powder

* Sesame seeds, for coating

Method

  1. Prepare the oven

Preheat the oven to 180°C for approximately 30 minutes.

  1. Prepare the cake batter

In a mixing bowl or cake mixer, combine the flour, sugar, oil, eggs, yogurt, ground cardamom, and saffron powder. Mix until the batter becomes smooth and well combined.

  1. Prepare the baking pan

Lightly grease the baking pan with oil and coat the bottom and sides with sesame seeds.

  1. Fill the pan

Pour the cake mixture into the prepared baking pan and spread evenly.

  1. Bake the cake

Bake for approximately 30 minutes, or until the cake is golden in color and fully cooked through.

  1. Serve

Allow the cake to cool slightly before serving. Enjoy with traditional Arabic coffee or tea for an authentic Kuwaiti experience.

Lugaimat (Traditional Kuwaiti Dessert)

Lugaimat are one of Kuwait’s most beloved traditional desserts, soft, fluffy dumplings with a crisp golden exterior, delicately flavored with saffron and cardamom, then drizzled with sweet syrup. Often served warm, these bite sized treats are especially popular during gatherings and special occasions.

Ingredients

For the Lugaimat

* 2 cups flour

* 1 potato

* 200 g yogurt

* 5 g yeast

* 1/4 tsp saffron powder

* 1/4 tsp cardamom powder

* Oil, for frying

For the Sugar Syrup

* 1 cup sugar

* 1 cup water

* A small pinch of saffron

Method

  1. Prepare the potato

Boil the potato until soft, then mash until smooth.

  1. Prepare the batter

In a mixing bowl, combine the flour, yogurt, yeast, saffron powder, cardamom powder, and mashed potato. Mix well until a soft batter forms.

  1. Rest the mixture

Cover the batter and set aside for approximately 1 hour to allow it to rise.

  1. Fry the Lugaimat

Heat oil in a deep pan over medium heat. Using a spoon, carefully drop small portions of the batter into the hot oil to form round dumplings. Fry until golden brown and crispy on all sides.

  1. Prepare the sugar syrup

In a saucepan, combine the sugar, water, and saffron. Bring to a boil and simmer until slightly thickened.

  1. Finish and serve

Drizzle the warm sugar syrup over the freshly fried Lugaimat or toss them gently in the syrup until coated. Serve warm and enjoy this traditional Kuwaiti dessert.

Traditional Arabic Coffee

Arabic coffee is a symbol of hospitality and tradition in Kuwaiti culture. Light, aromatic, and delicately flavored with cardamom, it is traditionally served warm alongside dates and traditional sweets during gatherings and special occasions. Serving Arabic coffee with dates is considered an essential part of the tradition and reflects the warmth and generosity of Kuwaiti hospitality.

Ingredients

* 1 liter water

* 1 cup instant Arabic coffee

* A pinch of ground cardamom

* Dates, for serving

Method

  1. Boil the coffee

In a traditional coffee pot or saucepan, combine the water and instant Arabic coffee. Bring to a boil over high heat.

  1. Simmer gently

Once the coffee reaches a full boil, reduce the heat to low and allow it to simmer gently for approximately 20 minutes to develop its flavor.

  1. Add the cardamom

Add the ground cardamom and continue simmering for a few more minutes until the coffee becomes fragrant and aromatic.

  1. Serve

Pour the Arabic coffee into a traditional serving pot and serve warm in small cups alongside dates and traditional Kuwaiti desserts. Serving dates with Arabic coffee is a preferable in Kuwaiti tradition.
